Time flies when you are having fun! And since Spaghetti Western Week is far too short (really, there is only so much ravioli a girl can eat in a week), I put together a round up of some of our other Italian influenced recipes that are already on our blog... just in case you missed a few. I've also included links to some of our food blogging friend's Spaghetti Western inspired recipes. There are healthy recipes, vegetarian recipes and a VEGAN recipe included in the mix as well. So, if you see a recipe you like, just mosey on over to their blog for the complete recipes.

Chilaquiles are a favorite dish in these here parts. In fact, they might be one of the "original" Spaghetti Western dishes. Tortilla chips, layered in a tomato-y sauce with melted cheese and black olives... sound familiar? I love quesadillas! We practically live on them in the summer when it is too hot to turn on the oven. And, this might be the perfect recipe to wrap up our Spaghetti Western Week Recipe Round-Up with. Everyone considers goat cheese to be a fancy French thing. Well, I guess it is. BUT! It is also a Latin thing and a Southwest thing. Many of the families in the little Arizona town that my mom grew up in actually had goats in their front yards as late as the 1950's. Who knows? Maybe they are still there. The goat's milk was turned into homemade, "artisan before it was cool," cheeses and the best dulce de leche ever!
