Southwest Chicken Spring Rolls are perfect for the Super Bowl

Southwest Chicken Spring Rolls are perfect for your Super Bowl party!  I love to sneak Southwest flavors into unexpected places and spring rolls are one of my favorite ways to do that.   Your guests will love these crunchy little packages, they’re just right for casual parties or any type of buffet.

The Super Bowl  always seems to draw  my family together for a fun afternoon with out the formal “stuffiness” of  other holidays.  And yes, to my family with three men and one girl (me), the Super Bowl has become sort of a holiday.  I always serve these  Southwest Chicken Spring Rolls because they can be made in advance and fried up quickly while the game is on.  They hold well on a buffet without a warming dish and make a great scoop for guacamole, salsa or sour cream.  The best thing about them is that they are so quick and easy, I have time to watch the game!

Southwest Chicken Spring Rolls

24 egg roll wrappers

4 chicken breasts

2 tomatoes, diced

1 ear corn(or 1 cup frozen kernels)

1 cup black beans, drained and rinsed

1/2 onion,diced

1 jalepeno, seeded and minced

1 tablespoon garlic, minced

salt and pepper to taste

Season chicken breasts with salt and pepper.  Grill or roast (a grill pan works well and saves a lot of time.)  Remove skin from chicken and dice.

Toss together tomatoes, corn, black beans, onion, jalepeno, garlic.

Add chicken and season with salt and pepper to taste.

Place 2 tablespoons of chicken mixture in the center of egg roll wrapper.  Keep a damp paper towel over the egg roll wrappers so they don’t dry out too quickly.

Roll firmly, tucking in the ends as you go. Deep fry until golden brown.

Slice at an angle.

Serve as is or with your favorite salsa or guacamole

    I’ve been craving these since Christmas. Thank you for posting….and SUPER thank you for posting photos of how to fold them, for the folding challenged folks out there….(me). Will be trying soon!
