How do you create a burger to match the all-time favorite Ultimate Green Chile Bacon Burger, you might ask? It was really hard. I'm not going to lie. I had to go back to my Southwest roots and mix amazing Mexican flavors with the modern freshness of Southern California.
Then, BAM! The MexiCali Burger Breakdown was born.
So, grab a batch of french fries and some frickles... yes... I said frickles (trust me on this one, you will love them). Then, let's throw a great Hamburger on the grill.
What is a MexiCali Burger? The Flavor Profile
A MexiCali Burger Takes the flavors of Old Mexico and piles them between the layers of an American Burger Bun. Think Chilaquiles on a bun.
- Smokey Chorizo mixed into a ground beef burger patty
- Red Chile Enchilada Sauce
- Crispy Bacon
- Guacamole
- Mexican Spices like cumin, garllic and chile
- Sunny Side Up egg or egg or your choice
- Don't forget a really great bun!
This is a hearty burger that really packs a flavor punch. Don't be shy about using a little heat from the red chile enchilada sauce or jalapenos. This burger can even stand up to a traditional mole sauce so try our award winning mole sauce right here on Everyday Southwest to add plenty of Mole Burger flavor.

Ingredients for MexiCali Burger with a Gourmet Burger Flavor
- First up, the Chorizo - Mix flavor filled fresh ground pork chorizo into the ground beef for a smokey, Mexican flavor that does not over power the burger.
TIPS FOR CHORIZO - use the fresh gound pork chorizo that looks like ground beef only spicier. DO NOT use the dried chorizo that looks like a small salami. You may find fresh chorizo at the butcher's counter that is in casings that look like fresh Italian sausage. That is good to use as long as you can remove the casings and treat the chorizo like ground beef.
- Next, the sauce - I use red chile sauce or my favorite canned enchilada sauce for a quick way to add Mexican flavor. Chile sauce like Frank's or Cholula Hot Sauce is great mixed into a little mayo.
- Guacamole is a perfect addition
- Top it off with a Sunny Side Up Egg (or your favorite egg). Trust me though, the runny yolk is delicious on this burger.
- Don't forget a great bun! I like brioche buns but they can be hard to find. Just make sure it is a sturdy bun so it doesn't fall apart with all the fixin's inside.

I am obsessed with Brockton Villa Restaurant's Chilaquiles. Their chilaquiles are a delicious pile of corn chips simmered in spicy red chile sauce that is topped with layers of chorizo, steam scrambled eggs, avocado and pico de gallo. The final touch is a dollup of sour cream is spooned on top. They haunt my day dreams.
I just had to turn those flavors into this delicious, over the top gourmet burger recipe. Now, I can eat them any dayโnot just on a road trip.

MexiCali Gourmet Burger
Ingredients
- 1 cup red chile sauce or your favorite enchilada sauce
- โ cup ground tortilla chips
- ยพ pounds bacon, cooked
- 1 โ pound ground beef
- โ pound soft Mexican chorizo (not the dried, salami type)
- Salt
- ground black pepper
- 1 small red onion, sliced
- 1 whole tomato, sliced
- 1 whole serrano or jalapeno chile, thinly sliced
- ยผ cup minced cilantro
- ยฝ head lettuce
- 1 cup guacamole
- 6 whole brioche buns, toasted
- 6 whole eggs
Instructions
- Heat red chile or enchilada sauce and simmer. Stir in enough of the crushed tortilla chips to thicken the sauce to the consistency of mayonnaise. Chill.Cook the bacon to crispy.Mix the ground beef and chorizo together. Season with salt and pepper. Form mixture into patties, cover with plastic wrap and chill until ready to grill.Toss sliced tomatoes, sliced onion, sliced chile and cilantro together with the lime juice. Season with salt and pepper. Set aside. Grill the hamburger patties. The patties should be cooked through, not medium rare because the chorizo needs to be cooked through and not raw.Cook the eggs to sunny-side up.Assemble the burgers by spreading the red chile sauce on the bottom bun. Top with a layer of lettuce, slice of tomato, onion and serrano or jalapeno. Place a burger on the tomato stack. Add a spoonful of guacamole and crispy bacon. Top with a sunny-side up egg and top bun.
