Elvis Peanut Butter and Bananas Pancake Bites with Bacon

The Happy 80th Birthday to The King of Rock and Roll... where ever he may be! Make up these amazing Peanut Butter and Bananas Foster Pancake Bites and have a little '50s inspired Cocktail Hour in his honor (mocktails work just as well!).

Elvis Peanut Butter and Banana Recipe

 

The holidays never stop around here until we have and Elvis Birthday Celebration.  It's just a fun way to add a little something special to the week.  I have a couple of "go to" to fast and easy recipes for his favorite peanut butter and bananas combination that my family loves.

This year, in keeping with my "Queen of Last Minute" title, I whipped up a cute little appetizer out of my Peanut Butter and Bananas Foster Pancakes Recipe.  When I made them, I was a little afraid that my family would think I had gone "off the deep end."  But, they loved them!  And ate them as fast as I could get the little piece of bacon on top.  Can't forget the bacon... these are for The King, after all.

If you are about to leave work and have  not thought about dinner yet, let alone Elvis's Birthday, never fear.  You can whip these up in nothing flat!  And I know you have peanut butter and the makings for pancakes at home.  Come on, everyone has bacon!  The bananas??? Every convenience mart around usually has bananas so, just pull in and grab a couple it will only take a minute.

Just use the recipe for my regular sized Elvis Peanut Butter and Bananas Foster Pancake Stack to make these little guys.  The only difference is to spooon out the batter into smaller pancakes about 2 inches in diameter.  That way, you can fit one slice of banana on each pancake and still be able to pick them up "finger food" style.  After making the pancakes, top with a dab of your favorite peanut butter then, a slice of banana and a little carmel sauce.

Tips for making these fast and easy:

  • Use a pancake mix or your favorite pancake recipe.
  • You can thin down bottled caramel and sliced bananas instead of the Bananas Foster
  • Syrup on top works, too.  Although, it is a little thinner.
  • Cook your bacon in the microwave-fast and very little clean up.
  • Just use the recipe for my regular sized Elvis Peanut Butter and Bananas Foster Pancake Stack only

Have fun with these cute little Peanut Butter and Bananas appetizers.  Your small kids will love them... your big ones too!
