Tips for Making Peach Dessert Quesadillas
The key to making a top-notch quesadilla is something I learned as a kid growing up a few miles from the Mexican border:
- First- Cook the quesadilla in a large, covered skillet over medium heat with NO FAT IN THE PAN. Let me repeat for emphasis: DO NOT PUT FAT IN THE PAN! If you put fat in the skillet, it only makes the quesadilla greasy and often brunt on the outside. Just trust me on this - your flour tortilla will NOT burn and will NOT stick. It will turn out with a perfect crispy golden crunch.
- Saute the peaches until tender and the juice thickens a little. Cooking the filling in the tortilla goes very quickly and the peaches need to be cooked through before you start.
- You won't want too much liquid in the fruit, It will make the quesadilla soggy.
- Press the quesadilla down with a spatula to make sure all of the the tortilla comes into contact with the hot pan and gets equally toasted.
- Sprinkle with cinnamon sugar mixture while the quesadilla is hot so that the mixture will stick to the quesadilla

Step By Step Making a Peaches and Cream Dessert Quesadilla

First- Peel and slice your peaches and have all of your ingredients out, measured and ready to go.
Next- Saute the peaches and ginger in the butter until fork tender, remove from heat.
Spread the cream cheese on one of the two flour tortillas needed for each quesadilla.

Heat a clean, dry (no fat in the pan) saute pan or skillet over medium to medium high heat. Place the tortilla with the cream cheese in the pan with the cream cheese side facing up.
Spoon peach slices onto the cream cheese side of the tortilla and top with the second flour tortilla.

Press down gently on the quesadilla with a spatula to be sure that the tortilla toasts evenly in the pan.
Toast the peach quesadilla until golden brown and lightly crispy. Turn the quesadilla over and toast the other side.
Sprinkle with sugar and cinnamon mixture while hot.
PEACHES AND CREAM QUESADILLAS Recipe

Peaches and Cream Quesadillas
Ingredients
- 1 teaspoon almond extract
- 16 ounces light cream cheese softened
- 8 medium 9 to 10 inch flour tortillas
- 4 cups ⅛ inch slices firm but ripe peeled peaches
- 2 tablespoons sugar
- 2 tablespoons butter
- 1 tablespoon fresh grated ginger
- Few dashes nutmeg
- Cinnamon sugar or caramel syrup as desired
Instructions
- Mix almond extract with cream cheese. Spread 2 tablespoons of cream cheese mixture on each tortilla..
- Toss peaches in sugar and sauté peach slices in butter, ginger and nutmeg over high heat in a 10 inch skillet, stirring constantly to brown but not burn. Remove from skillet and wipe pan dry with a paper towel. Spread ¾ cup of peach mixture over a tortilla. Repeat three times, making four covered tortillas.
- Place these four tortillas, tortilla side down, in skillet over medium heat. Place remaining four tortillas, cream cheese side down, on top of tortilla in pan. Press down with a wide spatula to remove any air pockets. Cover and cook 1 to 2 minutes, checking frequently until bottom tortilla is crisp and browned.
- Turn tortillas over and cover and cook another 1 to 2 minutes, until bottom tortilla is crisp and browned. Repeat this process for remaining tortillas. Sprinkle with cinnamon sugar as desired. Cut into wedges and serve immediately.
