Burger Month is here! I am so excited! This year, I was invited to join the Burger Month Celebration and enter an epic burger of my own, a burger that can live up to the challenge. After much grilling, taste testing and votes from family and friends, The Ultimate Green Chile Bacon Cheeseburger was the clear winner. It is our favorite burger of all time and never fails to please the crowd.
The things I love best about this Ultimate Green Chile Bacon Cheeseburger (besides the salty bacon and the fragrant roasted chiles) is that you don't have to stand in the kitchen all day making special sauces and toppings. Just prepare a tray of your ingredients and keep them chilled until party time. Then, roast the chiles right on the grill before you put the burgers on. It's that easy!

- 1 cup mayonnaise
- 1 clove garlic, minced
- 1 roasted poblano chile, peeled and seeded
- juice of ½ lime
- kosher salt
- fresh ground pepper
- 2 roasted poblano or Anaheim chiles
- 1 pound ground beef
- salt
- pepper
- 4 buns
- mustard
- 4 slices cheddar cheese
- 8 slices bacon, cooked
- 1 avocado, sliced
- 1 small tomato, sliced
- 2 slices of onion, divided
- lettuce
- Combine mayonnaise, green chile, garlic and lime juice in a food processor. Blend until smooth. Season with salt and pepper. Chill until served.
- Roast chiles over flame, grill or in the oven. Peel, seed and slice.
- Form beef into 4 patties, season with salt and pepper. Grill the beef patties over a medium high flame to desired temperature.
- Toast buns lightly over the grill. Spread bottom bun with a little mustard.
- Stack the ingredients on the bottom bun: beef patty, cheese, onion, green chile strips, bacon, avocado, tomato lettuce then the top bun.
