Green Chile Bacon Cheeseburger with Green Chile Mayo

  • 1 cup mayonnaise
  • 1 clove garlic, minced
  • 1 roasted poblano chile, peeled and seeded
  • juice of ½ lime
  • kosher salt
  • fresh ground pepper
  • 2 roasted poblano or Anaheim chiles
  • 1 pound ground beef
  • salt
  • pepper
  • 4 buns
  • mustard
  • 4 slices cheddar cheese
  • 8 slices bacon, cooked
  • 1 avocado, sliced
  • 1 small tomato, sliced
  • 2 slices of onion, divided
  • lettuce
  1. Combine mayonnaise, green chile, garlic and lime juice in a food processor. Blend until smooth. Season with salt and pepper. Chill until served.
  2. Roast chiles over flame, grill or in the oven. Peel, seed and slice.
  3. Form beef into 4 patties, season with salt and pepper. Grill the beef patties over a medium high flame to desired temperature.
  4. Toast buns lightly over the grill. Spread bottom bun with a little mustard.
  5. Stack the ingredients on the bottom bun: beef patty, cheese, onion, green chile strips, bacon, avocado, tomato lettuce then the top bun.
