It's a special day when we have beef for dinner so, it has to be tender, moist and flavorful. This Chocolate Chipotle Flank Steak is an A-plus in all three categories.
If you don't want a large steak, no problem. This flank steak recipe makes delicious Steak Kabobs or Fajitas.
What Do You Serve with a Great Steak Recipe?
A great beef recipe needs a terrific side dish to stand up to it. I like to serve this recipe with Southwest versions of my favorite steak house side dishes.

How to Grill Flank Steak with Chocolate Chipotle Marinade
The best ways to cook a great steak are on a wood-fire or charcoal grill. A Blackstone Steak cooked on a griddle or flat top has perfect sear on the outside and very juicy on the inside.
- Place the flank steak in a large zip bag or non-reactive dish like Pyrex or ceramic dish.
- Pour the marinade over the flank steak, remove as much air as possible. Seal the bag tightly and place in a dish. If using a dish, cover with plastic warp.
- Refrigerate for 6 to 8 and up to 24 hours. Remove it from the fridge and let it come to room temperature.
- Start your grill and preheat to a nice medium high heat. Brush the grate with oil.
- Grill away to get a nice grill marks each side and to your preferred temperature. Your steak will be moist and flavorful on the inside.
- Slice against the grain for thin, tender strips.

Grilled Flank Steak with Chocolate Chipotle Marinade
Ingredients
- ½ cup red wine vinegar
- ¼ cup brown sugar
- ½ cup cocoa powder
- 2 tablespoons chipotle chile powder
- 1 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- Pinch of cinnamon
- 2 ½ pounds flank steak
Instructions
- Mix together red wine vinegar, brown sugar, cocoa powder, ground cumin, chipotle powder, garlic powder, salt and cinnamon.
- Pour marinade into a non-reactive dish (Pyrex, ceramic or plastic work well) or large zip top bag.
- Add flank steak and cover with plastic wrap.
- Refrigerate for 6 hours or up to 24 hours.
- Remove from refrigerator and bring to room temperature.
- Grill to desired temperature.
- Allow the flank steak to "rest" for 10 to 20 minutes before slicing across the grain.
