Shrimp Cocktail Taco Bites

Looking for a low-cost way to serve shrimp appetizers on Superbowl Sunday or your next party? I saw something similar served once at a fancy wedding reception, and have always wanted to try my own version. This is a great way to serve shrimp because, each guest only eats one shrimp! It's fun and festive, and looks fabulous on a buffet table.

The trick is to set the shrimp on top of a little shot glass and fill the glass with a little drink to "chase" the shrimp. I like V-8 juice mixed with a little cocktail sauce. I used some votive candle holders that I had left over from my daughters' weddings a few years ago, and they worked perfectly. The bonus: this is one of those dishes that will make you seem like a fabulous chef who has slaved for hours, but in reality this is one of the easiest appetizers I have ever made!

ONE-BITE SHRIMP COCKTAILS with Zesty Vegetable Juice Shot

NOTE: You will need 12 small shot glasses or other small glasses to serve this dish. If you don't have any of these small glasses, just make the top part without the vegetable shot and serve them on a platter.

12 peeled, cooked and chilled medium sized shrimp
4 corn tortillas
Canola oil for frying
⅔ cup purchased cocktail sauce, divided
½ cup minced cilantro
6 green onions, green cut half lengthwise and in 3 inch pieces
1 cup V-8 vegetable juice

Place shrimp in cold water with 1 tablespoon of kosher salt and set aside while working on dish.

Heat oil in a small skillet to medium high heat. Cut tortillas with a round cookie cutter that is slightly bigger than the circle of the top of your shot glasses. Cook tortilla circles in oil for about 20 seconds on each side, until firm but not hard. Press cooked circles with paper towels to remove excess oil. Let cool.

Mix together ⅓ cup of cocktail sauce and the V-8 juice. Pour liquid into each glass so that there is about ½ inch in each.

Drain and rinse shrimp.

Spread on top of each tortilla circle in the following order: ½ tablespoon of remaining cocktail sauce; a little cilantro; a green onion stick; one shrimp.

Place topped tortilla circle on top of each filled glass and serve so that guests will pick up and eat tortilla and shrimp and then drink the liquid in the glass.
