Steak Bites in Air Fryer with Chimichurri are fast, flavorful, and perfect when you want juicy and tender beef without turning on the grill. The steak cubes stay juicy with crisp edges and cooks in minutes. The chimichurri adds that fresh, garlicky, herby kick that takes everything up a notch.

These air fryer steak bites make an easy weeknight dinner. They are a great protein for bowls or salads, or a crowd-pleasing appetizer served straight from the air fryer. Steak Bites with Chimichurri are delicious in tacos or burritos, too, that makes them one of the best beef recipes.

Food Safety Tip: Do not use the chimichurri that you marinate the steak in. It will have raw beef juices mixed into the sauce. Be sure to throw out the marinade.

Steak Bites

  • Sirloin steak: A lean, tender cut that cooks quickly and stays juicy in the air fryer.
  • Salt and black pepper: Enhance the natural flavor of the steak, add it to taste.

Chimichurri Sauce

  • Fresh parsley: The base of the sauce, it provides a fresh, herbal touch.
  • Garlic: Adds bold, savory flavor.
  • Dried oregano: Brings an earthy and aromatic taste to the sauce.
  • Red pepper flakes: Add a little heat (adjust to taste).
  • Red wine vinegar: Gives chimichurri its signature tang.
  • Olive oil: You can choose to use either olive oil or any vegetable oil.
  • Salt and pepper: They balance out the other flavors, adjust to taste.

How to make this Air Fryer Steak Bites recipe

Mix all the ingredients for chimichurri, except for oil, in a mason jar or bowl and let it rest for 10 minutes.

Add oil and mix well. If you’re not in a hurry, it's best to leave the chimichurri flavors infusing for a couple of hours or overnight.

Once ready to cook the steak bites, season them with salt and pepper. Leave it on the counter while you preheat the Air Fryer to 375°F.
Arrange the steak pieces in the air fryer basket in a single layer, without overcrowding. Cook for 8–10 minutes, shaking or turning the pieces halfway through. When you turn them, toss the steak bites with a couple of tablespoons of chimichurri, then continue cooking until they reach your desired doneness.
Optional: marinate the steak bites for 30 minutes with some chimichurri before cooking.

What cut of steak works best for Air Fryer Steak Bites?

NY Strip Steak is my favorite cut for steak recipes. Sirloin is also a great choice because it’s tender, flavorful, and cooks evenly in the air fryer. Ribeye or tenderloin also work well if you want something richer or more indulgent.

How do I know when the Steak Bites are done?

For medium-rare, cook closer to 8 minutes; for medium, aim for 9–10 minutes. Since air fryers can vary, it’s best to check a piece early and adjust as needed. Remember, the steak will continue to cook slightly after you remove it.

Can I make Chimichurri ahead of time?

Yes, chimichurri actually tastes better after it sits for a few hours. You can make it up to 3 days ahead and store it in the fridge. Just give it a good stir before serving.

Can I reheat Steak Bites in the Air Fryer?

You can, but keep the time short. Reheat at 350°F for 2–3 minutes to avoid overcooking. Steak bites are best enjoyed fresh, but this helps bring them back to life.

  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

Chimichurri Sauce

  • ½ cup fresh parsley chopped

  • ¾ cup vegetable or olive oil
  • 1 teaspoon salt
