Who said Southwest recipes can’t be light and healthy or fit into a clean eating lifestyle? My Lazy Summer Salsa is made from fresh, roasted tomatoes and jalapenos and makes a fast and easy sauce for grilled chicken or beef.
When you think about healthy, clean eating, you probably don’t think about Southwest food. I hope to change your mind. This summer, we are sharing lots of our favorite light and healthy Southwest recipes made with fresh ingredients.
First on the list is my Lazy Summer Salsa Recipe. This roasted tomato and jalapeno salsa is the base of most of my summer cooking. It is a fast, easy and the vegetables can be roasted outside on the grill or indoors in the oven or skillet. Just roast the veggies and pulse them in a food processor into a nice chunky salsa and serve with chips and guacamole or as a light sauce for all of your summer grilling recipes.
To start the season of with a bang, I’ve joined with some other amazing bloggers for an “Eat Clean 2014 Challenge.” We are joining our blogs together once a week for the next four weeks and offering some healthy, “clean” recipes that have no processed ingredients. Lazy Summer Salsa Recipe from Everyday Southwest (That’s Me!)
Mean Clean Green Popsicles from Life as Mrs Larson
- 6 medium or Roma tomatoes
- 1 medium yellow onion
- 2 to 3 jalapenos
- 4 tablespoons corn or vegetable oil, divided
- 4 cloves of garlic
- ½ cup vegetable or chicken stock
- salt and black pepper
- Pre-heat oven to broil.
- Remove the stems from the tomatoes and jalapenos. Slice them in half and place them in a large mixing bowl. Scoop the seeds and ribs out of the jalapenos to reduce their heat level, if desired. Cut the onion into quarters and add to the bowl.
- Toss the vegetables with 2 tablespoons oil and place them on the baking sheet with the cut sides down, sprinkle with salt and pepper.
- Place the baking sheet on the top rack of the oven and broil the vegetables until the skins begin to char, about 8 to 12 minutes. Halfway through, add the garlic cloves.
- Remove vegetables from the oven and allow them to cool for a few minutes.
- Remove the skins from the tomatoes and jalapenos, if desired. Place the roasted vegetables in a food processor or blender with the stock and puree into a chunky salsa.
- Pour the tomato salsa into a dry pan and heat to a simmer. Cook for 2 to 3 minutes. Season with salt and pepper.
- Use Lazy Summer Salsa as a sauce or refrigerate and serve with chips.
