Mexican Meatballs Recipe or Albondigas!

This is a terrific basic meatballs recipe. The meatballs can be served in a Meatballs Soup or Tortilla Soup. They are delicious with your choice of enchilada sauce or Salsa Verde, grated cheese, and minced cilantro. They may also be sauted or baked in the oven until cooked through and there is no pink in the middle.  Makes 4–6 servings.

Notes

*Cilantro- please notice that this is a large amount of minced cilantro. You may want to adjust the amount of cilantro to ¼ cup the first time you make the meatballs.
**These meatballs may also be baked in the oven or sauted until cooked through with no pink in the center.
