Fire and Ice Spiced nuts, in gift buckets

I always look forward to spicy nuts during the holidays - such a nice change from sugary treats. These are so good that I have been craving them all year and I couldn't wait to make them for Christmas this year. The spiciness is balanced by the coolness of the crystallized ginger and craisins. Yum.

Make up a couple of big batches to give to all the neighbors, and be sure to make plenty extra - - they're very addicting!

FIRE AND ICE SPICED  NUTS

2 teaspoons of each cinnamon and cumin
1 tablespoon chipotle chile powder (or smoked paprika),
1 teaspoon each garlic powder and kosher salt
½ tablespoon molasses
A few dashes Tabasco sauce
2 large egg whites, beaten until frothy
6 cup total mixed nuts
¼ cup sugar
¼ cup crystallized ginger, minced
½ cup craisins, diced

Preheat oven to 225 degrees.

Line 2 baking sheets with parchment paper or silicone mats. Stir all spices together with molasses, Tabasco sauce and egg whites. Toss with nuts. Spread on baking sheets so that nuts are in a single layer.

Roast for 90 minutes, stirring every 15 minutes. Remove from oven and toss with crystallized ginger and craisins. Spread out to cool completely.
