Mini Onion Rings

Hey everyone this is Summer from Summer Scraps! I am so excited to be sharing one of my Simple Recipes on Everyday Southwest! I just love onion rings and sometimes want to make some simple ones to go with our hamburgers.  These mini onion rings are perfect for that!  I hope you enjoy this recipe as much as I do!

We happen to grill throughout the entire year.  I always like something delicious to go alongside what I am grilling and my mini onion rings often do the trick.  I also like to make them for a delicious and simple snack.

 Mini Onion Rings

Ingredients Needed:

  • Shallots
  • Buttermilk (or milk & vinegar)
  • Flour
  • Seasonings
  • Oil

Shallots are the perfect size and have a nice mild onion flavor. Start off by slicing the shallots thinly and place them in a bowl with 1 cup of buttermilk, and let them sit for an hour.  If you don't have buttermilk you can put 1Tbsp of vinegar in a measuring cup and fill the rest of the way to milk until you reach 1 cup.

Mix some seasonings (like salt, peper, seasoning salt) into the flour.  After the shallots have been in the milk in an hour scoop the shallots out with a fork and dredge in the flour.

Next you will want to heat some oil in a pan.  If you have a thermometer 375 degrees is a good temperture.  If you don't have  a thermometer then I would put the heat at medium/medium high.  Heat the oil until it sizzles.

Pull the shallots out of the flour and shake off the excess flour and toss into the oil.  Gently move the shallots around so they don't stick together.  When the shallots get golden brown pull them out and drain on a paper towell.  Don't step away from the stove - these cook rather quickly.

Serve up with something delicious like a Bacon Cheeseburger!

Oh my gosh I'm drooling! I think we need to have burgers and mini onion rings tonight to, especially since every day might be the last grilling day of the season up here in Toronto!

This is a great idea! They go right on the burger without being bitten in two. Great on salad, too.
