Sassy Smoky Southwest Sweet Potato Mash

Looking for a fabulous, flavorful fall side dish? Look no farther!

Sweet potatoes are perfect paired with spicy southwest flavors – I love adding smoked paprika, cumin and chile powder to them.

I have recently become a huge fan of the new Food Network star  Aarti Sequeria and her show: Aarti Party! I have learned something from every single episode. I am particularly fascinated at how she uses spices. I love how she “sautes” them in hot oil to bring out a roasted, intense flavor. So, I now cook my spices in the same way before adding them to savory dishes. Delish!

Try this sassy and smoky mash and you”ll  never go back to mashing them into a 9 by 13 and sprinkling with marshmallows!

SASSY SMOKY SOUTHWEST SWEET POTATO MASH

4 large sweet potatoes
1 large Yukon Gold potato
1 yellow onion, diced
1/4 cup unsalted butter
2 teaspoons chipotle chile powder
1 teaspoon cumin
1/2 cup sour cream
1 tablespoon kosher salt (or more to taste)
1/4 teaspoon cinnamon
2 tablespoons lime juice

Preheat oven to 375 degrees.

Cut sweet potatoes and Yukon potato in half lengthwise. Bake for 40 to 50 minutes, until soft. Remove from oven and let cool to warm.

Saute in a large stockpot over medium high heat the onion in butter for about 3 minutes until softened. Add spices and let cook another 2 minutes.

Scoop out potato flesh with a spoon and add in potatoes, sour cream, salt, cinnamon and lime juice and mash to desired consistency. Serve warm.
