Southwest Chicken Lettuce Wrap

I’m always on the look out for low-fat and low-carb recipes that my family will love.  This recipe for Southwest Lettuce Wraps is just the ticket!  I simply took the filling for the Southwest Spring Rolls that I plan to serve at my Super Bowl party and and wrapped it in lettuce cups.  That way, I don’t have to make one recipe for my family and one recipe for me.  Nothing takes the motivation out of dieting faster that having to cook two meals!

I have always been a huge tamale fan – ever since the days my mom and sisters and I would make 100 dozen tamales at Christmas time to give to friends, family and neighbors for gifts. Whipped lard makes the tamale masa so light and fluffy. I never thought anything could be better than whipped lard – - – until now!

You can make a spread of equal parts butter and canola oil that whips up just like lard – it looks a lot like whipped cream when fully whipped.

I LOVE this spread. It has a buttery taste but is smooth, light and maintains its spreadable texture even when chilled. I used unsalted butter because to me it has a fresher taste, and then added kosher salt. And, this spread cost only about $1.50 to make at home, compared to similar purchased butter spreads of the same quantity for about $5.00.

Try this healthier mix in your next tamale or flour tortilla recipe and you won’t even miss the lard!

Southwest Chicken Spring Rolls are perfect for your Super Bowl party!  I love to sneak Southwest flavors into unexpected places and spring rolls are one of my favorite ways to do that.   Your guests will love these crunchy little packages, they’re just right for casual parties or any type of buffet.

The Super Bowl  always seems to draw  my family together for a fun afternoon with out the formal “stuffiness” of  other holidays.  And yes, to my family with three men and one girl (me), the Super Bowl has become sort of a holiday.  I always serve these  Southwest Chicken Spring Rolls because they can be made in advance and fried up quickly while the game is on.  They hold well on a buffet without a warming dish and make a great scoop for guacamole, salsa or sour cream.  The best thing about them is that they are so quick and easy, I have time to watch the game!

A Classic Southwest Cheese Dip – Chile Con Queso – Made Healthier

Did you know that the average American consumes 1,500 calories during the super bowl? Yikes!

So, just in time for some fun super bowl recipes, we here at Everyday Southwest want to do our part to lighten up.  We took on the challenge of making the classic warm cheese dip lighter but still full of flavor.

I added low fat evaporated milk, which has a nice cooked flavor but not lots of fat. We also added less cheese and more veggies. You can also try this dip with celery, jicama sticks, cucumber slices and other veggies to make it even healthier.

Warm up on a Winter’s Night with Weeknight Chicken Posole Recipe

What could be better on a chilly winter’s night than a bowl of smoky, earthy posole? Better yet, make a huge batch and keep warm in a slow cooker on super bowl Sunday!

Posole is a spicy corn stew and an ancient food that originated in southern Mexico – it has withstood the test of time because it is so easy and flavorful. The native peoples considered corn to be a sacred plant and so posole was a popular and revered dish.

This is an incredibly easy version – from grocery bag to table in 45 minutes!
